A Healthy Date-Night Meal from Edison James Island

Pan-seared pork tenderloin with steamed shrimp dumplings and a baby greens salad

Tucked in the heart of James Island, this quaint bistro is a perfect spot for date night or a celebratory dinner out. With that in mind, Roper St. Francis Healthcare affiliated dietitian Erin Castle chose a meal for two off the dinner menu. “When I go out to eat—particularly somewhere new—I want to get the full experience by trying multiple dishes, which usually means sharing,” she says.

  • Castle mapped out the duo’s order at the start of the meal to ensure the dishes were nutritionally varied. For one appetizer, she picked the baby greens salad (pictured above, left). “I wanted a primarily non-starchy vegetable dish since our other meal choices would supply protein, carbohydrates and fats,” Castle says.
  • TIP: Edison is child-friendly and boasts a better-than-average kids’ menu, like grilled salmon with herb butter. “That would be a great source of heart-healthy omega-3 fatty acids for your kiddo,” says Castle.
  • Baby greens are high in vitamin K, a nutrient that supports blood clotting and heart and bone health. Radishes are a good source of fiber, vitamin C and antioxidants—all of which are key for immune and heart health.
  • For another starter, the pair split steamed shrimp dumplings (pictured above, bottom right). “Shrimp is a good source of protein and vitamin B12,” she says. “And the ginger, plum and scallion in the dumplings offer antioxidant properties.”
  • The pork tenderloin came with Brussels sprouts, butternut squash hash, rainbow carrots, pancetta and an apple butter gastrique. “It caught my eye for its variety of veggies (three in one dish!) and lean protein option,” she notes.
